Kale and Kravings: Healthy PB Chocolate Banana Bread

So you find yourself in the dining hall with an entrée and two sides. You have one side left to take, so you grab a banana at the register and throw it in your backpack. When you get back to your dorm, you unload your backpack and add the banana to a pile of lonely bananas sitting on top of your mini fridge.

They’re the easiest side to grab, but most of us don’t eat bananas at the rate that our fellow monkey ancestors do…or at the rate of our acquisition of this beloved yellow fruit!

Before you know it, a few have turned brown, and it’s time to throw the pile away.

The next time this phenomena happens, I challenge you to pull up this recipe for my Healthy Peanut Butter Chocolate Banana Bread and put those spotty bananas to good use! This recipe is also gluten free and sugar free (except for the chocolate because we gotta live a little)! So grab your friends, grab your bananas and find your nearest oven to whip up this bread…I promise it’s so good you won’t want to share!

HEALTHY PEANUT BUTTER CHOCOLATE BANANA BREAD

Ingredients:

  • 2 Super ripe bananas
  • 2 Eggs
  • 1 Tsp vanilla extract
  • ⅓ Cup peanut butter (or another nut butter)
  • 1 Tsp baking soda
  • ½ Tsp cinnamon
  • ¼ Tsp salt
  • ¾ Cup almond flour
  • ⅓ Cup chocolate chips

Directions:

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, use a fork to mash the bananas.
  3. Use a whisk to mix in the eggs, vanilla and peanut butter until smooth.
  4. Mix in the rest of the dry ingredients.
  5. Bake for about 45 minutes.
  6. Cool, cut, EAT!
